You Can Cook Almost Anything On a Grill!

Cooking and roasting on a grill can really seal in the flavors. One of our favorite recipes is roasting a whole chicken on the grill. We use a special spice or rub called “Kickin’ Chicken” that has a bit of bite to it but you can make up your own rub by just combining some spices you have on hand.

Use spices that you like the flavor of. If you like spicy flavors you can use some red pepper flakes and fresh ground black pepper. The following spices also go well with a chicken rub: tarragon, a little cumin, garlic powder, basil, crushed thyme or thyme leaves, chili powder (not too heavy), herbs de Provence, you get the idea. Get creative!

If you like it sweeter you can use some brown sugar but be careful not to use too much as sugar will brown it more and faster and tends to burn more.

The grill temperature usually reads around 400 degrees when we roast chicken. It gets nice and crisp on the outside and so juicy and tender on the inside. A friend that is an excellent cook in her own right said it was the best roasted chicken she ever had!

You can do the same with a pork shoulder roast. We cook it a long time, several hours and maybe not quite as hot but it just falls apart and the flavor is out of this world!

I will write more articles on what I do with the leftover pork and chicken to make the meat into a tasty taco filling. YUM.

Roasting veggies on the grill is a snap too. Just slice up some eggplant, zucchini, yellow squash, onions, etc. Brush them with a little olive oil and sprinkle with some spices and roast. You will have to watch them a little closer as they will roast pretty quickly but very tasty. You can skewer them or just put them directly on the grill.

Get creative and start cooking and roasting everything on the GRILL!

CAUTION!: When transporting a large grill in the back of an open pick-up truck you should always strap it down! Ask me how I know that!

We happened to have purchased a very large stainless grill and it took 3 men and a small boy to load it into the back of the truck. It was up against the cab while we were driving on a very dangerous highway on a windy day. The wind picked it straight up (it never even touched the tailgate) and it came crashing down in the middle of a four lane highway! We pulled over and I stepped out into 4 lanes of traffic to stop them so we could get out into the 3rd lane and pick it up and get it off the highway. It would have caused a serious accident if we hadn’t gotten it out of the middle of the busy highway immediately.

So, please take my advice and ALWAYS strap it down. It doesn’t matter how heavy something is, wind is a funny thing and can really be amazingly strong.

Just FYI, even though the grill had some road rash and we lost some parts, we ordered more and put it back together and still use it today several years later. We are just extremely grateful that no one was injured.
